Do you have plenty of corn with which you aspire to make something flavourful? If yes, it is a perfect time to showcase your culinary skills. Come! In this guide, I will teach you how to prepare authentic calabacitas. Loaded with onion, garlic, tomato, corn, and zucchini, this Mexican delight is a showstopper for vegetarians.
During summer, whenever I pass through my garden, I am delighted to see an abundance of summer squash and zucchini, and I promise to treat myself to the tastiest calabacitas con elote the next day. Though I can make innumerable delicious items using zucchini and corn, calabacitas con elote is my go-to choice.

Calabacitas
As the term suggests, calabacitas con elote is a Mexican word which means “zucchini with corn”. The simplicity, nutritional properties, and comforting flavour make this dish a must-try during summer.
There are different ways to recreate this dish. Some people add green chillies and colourful bell peppers to this dish. However, I will be sharing my method of making calabacitas. And yes, if you are a non-vegetarian, you may add chicken or pork to make it a nutrient-dense meal. If you are a vegan, you may skip cheese and creamy sauce. The addition of whey makes this a healthy and delicious meal.

Ingredients and Substitutes
- Corn kernels (4 whole corn cobs)
Corn kernels are sold at the market at a low cost during summer. However, if you do not wish to remove the husk or cut them, use canned or frozen corn. Using canned or frozen products has never been my preference. Thus, I add fresh products to my dish.
- 4 Yellow squash or zucchini (Chopped)
I prefer green Mexican zucchini. However, if you wish, you may use yellow squash. Don’t worry! It won’t affect the taste of your dish much.
- 1 Onion
I add white onions to my dishes. However, if you want, you may use yellow onions.

- 2 Roma tomatoes
The tomatoes must be firm. Before using them in your recipe, remove their seeds.
- 3 Garlic cloves (minced)
Garlic is a key ingredient in this dish. I suggest you use fresh garlic for that aroma. However, you may add jarred garlic if you prefer frozen or packaged products. However, I would NEVER go for jarred garlic.
- 2 cups whey
It is the healthiest product you can make in your kitchen within minutes. Whey is the water left after cuddling milk. You will need this water when cooking veggies. However, if whey is unavailable, you may use buttermilk. If using buttermilk, add extra salt to the water. You can also purchase whey online or from dairy shops.
- 1 Teaspoon olive oil for cooking
- Shredded cheese (Optional)
You may not add cheese if you are vegan. However, adding fresh cheese will enhance its taste.

Directions to Make Calabacitas
- Peel the outer skin and set the kernels aside.
- Heat olive oil and saute onion, garlic, and tomatoes till they turn soft and aromatic.
- Mix corn and zucchini and add whey. Boil and slow-cook the corn and zucchini. Since zucchini is hard, it takes approximately twenty to twenty-five minutes to become soft.

- Do not forget to add salt and black pepper to your dish according to your preference.
- Your calabacitas is ready. You may add shredded cheese to enhance its taste.
