Indian rolls are yet another widely popular fast food snack in the country. It consists of a filling wrapped in a flat and soft bread such as paratha (spiced flaky flat breads cooked on flat griddles), rumali roti, tortilla, or any thin sheet of bread. The filling can consist of vegetables, paneer, chicken, egg or kebab with accompaniments of fresh onion,  chutney and sauces, and flavouring and spices.  Originating from the famous Kathi rolls of Kolkata, they are now a popular take-away snack for all times:  breakfast, lunch, dinner, and the lunch-box.

Cover the paratha with a good spreading of mint chutney. Add the cooked filling,  then the onion rings,  followed by cabbage, carrots and your chosen sauce.  Make sure the filling is evenly dispersed over the paratha.

    Roll and Toast

    Roll and Toast

Roll from one end to the other,  fold in the sides if you wish, and crisp in a hot pan for 1–2 mins.  Until golden and crispy on the outside. Turn regularly so that the roll burns evenly,  without becoming dry.
