We all crave lip-smacking meals on weekends. I also crave them, and then I always remember my cousin. Thanks to her, after her graduation in Mexico, she made me the tastiest enchiladas. And being a cheese lover, this dish became my favourite. Hence, I thought it worthwhile to share this recipe with my followers. Hello foodies! I am back with another of my favourite Mexican dishes. Cheese lovers, are you excited? I promise that you won’t find something so tempting like an enchilada. Making this dish is so simple and creative that I stopped visiting taquerias. Now, I make enchiladas at home. And the best part is that you can refrigerate the enchiladas for around three days.

Cheesy Enchiladas
You have all the ingredients to make enchiladas in your kitchen- Cheese, green chillies, beans, and onion. You may make this dish protein-packed by adding sauteed chicken. Wrap these basic ingredients in corn tortillas alongside fresh toppings, and ENJOY!
The star ingredient of this dish remains the homemade red enchilada sauce. Yes! This sauce is available online. However, the taste of the homemade appetizing enchilada sauce is unparalleled. Note: I am sharing my favourite chicken enchilada recipe here. However, if you are a vegetarian, add mushroom filling to your enchilada.

Ingredients
Yields up to around eight servings
- 1.5 pounds boneless chicken breasts
- 15-ounce black beans
- 4-ounce green chillies
- 1 white onion
- 2 Tablespoons olive oil/avocado oil
- Salt
- Black pepper powder
- 3 cups shredded cheese
- 8 tortillas ( Corn/Flour)
- Red enchilada sauce ( Homemade/Packaged)
Optional Ingredients
- Cilantro
- Red onions
- Sliced avocado
- Cotija cheese

Directions to Make Enchiladas
- Preheat the oven to around 350°F.
- When your oven is preheating, take a saucepan and add oil. Keep the flame on high, and let the oil warm lightly.

- Add onion and cook it till it releases a flavourful aroma. At that point, add chicken pieces, salt, black pepper, and green chillies. You need to cook the chicken well.
- Add beans to it, and Mix! Mix! Mix!
- Once cooked, set aside the mixture and let it cool down.

- Alright! Now, you have everything to prepare chicken enchilada. In a tortilla wrap, spread a handful of lip-smacking red enchilada sauce.
- Overload the wraps with cheese.
- Roll the wraps and set them on a baking tray.

- Place your tortilla rolls in an oven and cook them uncovered for around thirty minutes.
- Once crisp, place the baking dish on a baking rack.
- Your dish is ready to serve. Add extra cheese, and garnish with cilantro and onions, and ENJOY!
