Instructions

Step 1: Cook a lemon butter mixture in a small pan, and mix all the lemon butter ingredients. Stir until the sauce becomes bubbly. Turned the flame off and kept warm

Step 2: Use fresh and clean paper to pat dry all extra moisture from the fish fillets. The most important step for the best cooking results

Step 3: After removing all excess moisture, evenly sprinkle a thin layer of kosher salt and black pepper on the top of the fillets

Step 4: In a separate big pan, on a high flame, heat 2 tbsp olive oil. Once the oil is releasing smoke and is hot, gently put 2 fish fillets and wait for 3 minutes until they’re properly cooked without moving the fish here and there. For 3 more minutes, flip the fish fillets using a large metal spatula. And you’re done
After this, lift the cooked fish onto a serving plate
Make sure before serving to anyone, re-warm the lemon butter mixture before serving
