Tacos de Papa originated in Mexico when the locals depended on potatoes when the meat was costly. People switched to potatoes as their staple to prevent their loved ones from starving. Potatoes were then available at a reasonable rate and used in almost every meal. Inspired by the local food culture, they tried making this potato dish tastier by seasoning it with aromatic spices, fresh garnishes, corn tortillas, etc. During that period, the Mexicans used mashed potatoes as a wholesome filling in tacos. Sooner, this Mexican delight became widely acknowledged for the combination of its hearty topping and the crunchy texture of the tacos. It highlights the ingenuity of Mexicans in facing difficult situations without giving up. Since then, it has served as a hi-tea at auspicious events.

Ingredients
Yields up to around 12 tacos
For the filling:
- 0.5 lb potatoes
- 1 Teaspoon salt
- 0.5 Teaspoon coarse black pepper
- 5 garlic cloves
For the sauce
- 1 lb tomatoes
- 2 garlic cloves
- ¼ white onion
- 1.5 cup chicken stock
- ¼ teaspoon coarse black pepper
- ¾ teaspoon Kosher salt
- 1 tomatillo, peeled and washed
For garnish
- Diced white onion
- Corn tortillas
- Cotija cheese
- Shredded lettuce/ cabbage
- Sliced radishes
- Sliced tomato

Directions to Make Taco de Papa
For tacos filling:
- Boil the potatoes till they soften, and add 5 to 6 garlic cloves for that aroma.
- Once the potatoes cool down, mash them and add salt and pepper powder to them.

For the sauce:
- For making the sauce, add water to the aforementioned ingredients and boil them until they appear mashy.
- Strain excess water, add flavourful condiments, and blend until smooth.
- Cook the puree for fifteen to twenty minutes. Once cooked, your homemade sauce is ready.

For the tacos
- In a pan, take some oil and keep it in medium to low. While the oil heats up, microwave 4 to 5 tortillas for 1 minute. Add mashed potatoes to the tortillas, roll them and cook them till they turn crunchy.
- Garnish your favourite Tacos de Papa with diced tomatoes, sliced onions, shredded cabbage, cotija cheese, and homemade sauce.
