Ingredients

For Pavlova Base
- Egg whites- 4 big (room temperature)
- Superfine Sugar- 1 cup (200g)
- Vanilla extract- 1 teaspoon
- Constrarch- 1 teaspoon
- White Vinegar- 1 teaspoon
- Salt to taste
For Toppings
- Fresh Fruits – Strawberries, kiwi, mango, and blueberries, etc
- Chilled Whipping Cream – 1 cup (240 ml)
- Icing Sugar (optional) – 1 to 2 tablespoons
Step by Step Procedure to Make Pavlova

Step 1 : Preheat the oven to 120°C (250°F). Line a butter paper in a 7-8 inch (18-20 cm) tray or tin, and use a circular tool for accurate results

Step 2 : In a fresh, large bowl, whip 4 egg whites on medium speed until soft peaks form. Slowly pour 1 tbsp superfine sugar, whisking perfectly all together
Do not skip the whipping process until stiff peaks form. To check if the texture is smooth or glossy, rub slowly between your fingers.

Step 3 : Slowly add cornflour, vinegar, vanilla extract, and salt to taste (Pinch). These give the pavlova a smooth or chewy texture, like the middle, and to avoid it from breaking too much

Step 4 : Move the meringue into the parchment tray, preferably the circle as a guide

Step 5 : Insert the tray in the oven and instantly turn down the temperature to 100°C (210°F). Bake for at least 60 minutes without checking again and again
After the baking process, turn off the oven and wait for one hour until the pavlova has cooled inside. This helps prevent immediate cracking

Step 6 : It’s time to whip chilled cream when soft peaks form, then you’re done. In between, if you want a sweetened taste, pour a little icing sugar

Just before any special occasions or normal serving, spread whipped cream evenly over the cooled pavlova and put fresh fruits to look more fancy. Select kiwi, or berries for a traditional touch, creativity with mangoes, peaches, or flowers
