At times, people desire to eat something light, healthy and tasty. So, I will share a recipe that cracks all your benchmarks. In summer, corn recipes please our palates the most. And what if it is grilled and enriched with butter, cheese and mayonnaise? I know! Even thinking of it is watering your tongue.

What is Elote?
Foodies, can you guess which dish I am talking about? Oh, yes! I am talking about the famous Mexican street corn (elote). And guess what! Making this dish is super-easy. Preparing this dish hardly takes twenty-five minutes. Try this homemade lip-smacking elote, and stop visiting lavish taquerias.
Making this dish requires only five ingredients readily available in your kitchen. So, let’s check what these ingredients are.

Ingredients
With these ingredients, you can make four elote.
- Corn (Four)
As the recipe suggests, corn is mandatory in making Mexican street corn. Thus, you require husked corn cobs.
- Softened butter and mayonnaise(1/4 cup)
Butter is the core ingredient of this Mexican delight. Once grilled, overload this tempting dish with butter and mayonnaise. Butter and mayonnaise in this dish take its taste to another level.
- Cotija cheese
Cheese in the dish requires no mention. If you are craving authentic Mexican street-style taste, don’t skip cheese. And the taste – it’s delectable.
- Lime wedges
It is an optional ingredient. However, lime wedges play a key role in making your dish look more presentable. And yes, sprinkling a little lime juice adds zestiness to the dish.

Hot to Make Elote
Sprinkle a little cayenne pepper, chilli powder and tajin seasoning on the dish before serving.
Making Mexican corn on the cob (elote) is so simple. Come, let’s check how to make it
- Preheat the grill to medium-high.
- Once preheated, place them on the outdoor grill and cook for 10-15 minutes.
- Apply a substantial amount of butter and mayonnaise.
- Top it with cotija cheese. You can add lime juice for the tanginess. Serve a lime wedge on the serving plate.

Tips
- I recommend adding a handful of chopped cilantro or parsley to this dish. Alongside enhancing its visual appeal, it boosts the flavour. If you love Mexican cuisine, you must know Mexicans top their dishes with fresh cilantro or parsley.

- Mayonnaise is unhealthy. However, I add fresh homemade mayonnaise and use it in my homemade Mexican dishes. If you want to replace unhealthy mayo with healthy homemade mayo, comment ‘healthy’. I will DM you its recipe.
- If you prefer fitness over taste, you may limit the butter and cheese in this dish.

Whenever I wish to enjoy lip-smacking homemade elote, I prepare everything on that day. However, you may grill the corn in advance and spread butter, cheese and mayonnaise before serving.

Substitutes
Several food enthusiasts aspire to use substitute ingredients and see how the dish tastes with substitute ingredients. If you too like experimenting with it and adding substitutes, here are the substitutes:
- Corn
White corn makes the best homemade elote. However, if you don’t have it or wanna try something different, replace it with yellow corn.
- Cotija cheese
I have posted several Mexican cuisine blogs to date, and in almost every recipe, I suggest using cotija cheese. Many of you comment if you can substitute cotija cheese if you don’t have it. So yes, if making elote, you can substitute cotija cheese with grated parmesan cheese.
